i switched over from mobile 1 to amsoil and it has been 1000 miles since the oil change. I signed up for track day(10/4) this Sunday and checked the oil, it was a bit dark brown. Should i change the oil and oil filter or just he oil before i hit the track.

Color of the oil is not the most accurate indicator of its viscosity and cleaning capability. Engine oil is a detergent. Of course it gets dirty as it picks up carbon particles and other junk. But just because it's "dark brown" it doesn't necessarily mean that it has to be changed.

Follow the regular recommended intervals and modify depending on use and conditions. That's your best bet.

also, wouldn't it be good to let the new oil filter absorb the new oil, and to let the new oil fully circulate through the engine for a little bit before racing? I would think changing both right before a race would be more likely to damage the engine/filter.

uh..just prime the filter.

To the OP, it's always good to have fresh oil. You're fine this time, but always change it after a track day. The oil won't look so bad after the track day, but just remember that there are more tiny pieces of metal since you've spent so long in the higher revs, even if the oil isn't particurally dark after the track day.
