I have a Yamaha YZF 600R. I dont know why but I could never turn my bike on without putting on the choke. When I come to a stop light if the choke is not applied the bike will shut off even if the engine is warm. Can anyone tell me why or what I would have to do to fix this.

It's not unusual to need to use some choke when the engine is cold. The stalling after warm-up could be as simple as the idle being set too low. The choke (enricher probably) effectively increases idle speed. After the bike is warmed up, gradually increase the idle setting while turning the choke off in steps. See if it will run while idling around 1200-1400 rpm with no choke after warmed up.

Adjusting the idle is easy. There should be an easily accessible screw or knurled knob on the left (?) side of the bike. Check your owner's manual.

Cleaning carbs is another matter. If you haven't let the bike sit with unstabilized fuel in it, the carbs should be OK.

Sounds like your pilot jet on your carburetors is clogged. The carbs on those YZF's are among the most difficult carbs to remove. God, I hate Yamaha's.
