With a 2000 GSXR6, are you able to mixmatch some of the plastics with newer ones? If so, which ones would you be able to get away with, and which ones would take some customizing? Any pics of bikes with it done, let me know. Thanks

I'm pretty sure you can't without some major modifications to the bike. The 600 was re-designed for 01, so it's a completely different body style which in turn, means that the dimensions will be off. How much? I have no idea.
