How easy/difficult is it to mount/unmount this rack? How long does it take, approximately?

I may be interested if it's relatively easy to put on/take off (seeing as I'd like to only mount it when I'm going to go away for a multi-day trip and ride without it otherwise).

If you don't have the taillight kit installed (unless you make a quick connect for the wiring) it's easy. The 2 front screws under the FZ6 Logo and the 2 bolts on the exhaust heatshields. This will leave the mounts on the bike, the ones that surround the the exhaust.

Sorry for the pesky questions, I imagine there's no requirements like having to have a stock exhaust, etc? I just want to make sure I can use it before I commit

Yes you have to have the stock exhaust as the givi bolts to the bottom of the stock exhaust manifold.
