If you can afford to drop $1200 for a deposit plus the daily rental fee of $250 for a bike (using Team Pro-Motion as an example), you can afford a used race bike for track days. I would never rent a bike from a track day school unless you are ready to throw that money away. At least if I wreck my bike I get to take it home and fix it. Even a used EX250/EX500/GS500 beater bike for track use is better than renting.
There is no insurance on this. The deposit is the insurance. If you dump the bike, kiss the deposit goodbye.
Now, if you don't mind renting a bike and renting leathers (bring your own helmet and other gear), go for it at whatever school you prefer. I personally would not drop $2K on something that I wasn't going to get to keep afterwards in the event of a wreck.
