Default Who's good with Illustrator? I need help.

OK so this should be a pretty easy question. I want to great my own gradient, seems simple right? For whatever reason Illustrator (CS2) is being a bitch and won't let me create one in color.

When I fill an object with the stock gradient (linear, black to white) it won't let me change either of the color stops to color, I can only choose greyscale. Why can't I change either of the color stops to a god damn color!?

Basically I want to be able to create my own gradients from scratch (one fill on each end, IN COLOR) but it's retarded and will only let me choose the gradients in the swatch palette, and won't let me edit the basic black and white gradient to make it color. WHISKEY TANGO FOXTROT.

(BTW this is really starting to piss me off, sorry if I'm coming off that way).
