Especially when I think the last time I was here was like a month ago...
Anyways, I did a very similar ride this summer. Not as developed on PEI.
And I had a blast! Cabot Trail was nice but I think I liked the coastal line between Halifax and Yarmouth the best. At work now but will get back to you with suggested itinerary and finds along the way.

Beautiful area, but the warm weather is short lived. I've been to Riviere Du Loup which is 200km north of Quebec City. I've been there 4 times on business in the last year. There's a great little B&B overlooking the St. Lawrence with excellent French Cuisine. During the summer tourist season, you can get by with English, but knowing a little French helps even in NB.
Quebec is a great place to visit because you get a taste of some French culture... without the hassles of traveling abroad.

BMW R1200RT ... not really a sportbike, but it's faster than you think.
1- The 105 between Grand Falls and Fredericton and then the 112 to Moncton are worth staying away from the T-Can highway. It follows the river all the way and is very nice. It is 80 Km/h but we never did see a police car there (this is recurring theme in the maritimes- no police).
2- Before the Confed bridge, a little detour on the 955 will give you nice scenery and nice pictures.
3- We did the Cabot trail clockwise and slept at Cheticamp. In this way, we were ready to tour the nicer part in the morning and did not cross a single RV (and little traffic).
4- We made it back to Antigonish and took the 7 south towards the Atlantic. The 7 is truly a beautiful piece of road.
5- And so is the first part along the Atlantic (Necum teuch and Spry Bay)
6- Make sure you take the secondary roads south of Halifax. For example, the 331 beats the 103 big time.
That's all I remember. I seem to have lost my touring map of the summer...
