With short dirt bike gloves or street gloves you have a higher chance of wrist damage and have a higher chance for the glove to wear away and giving you pretty bad road rash on your palms or any where your sliding. Gauntlet gloves have thicker leather in general, and have skid pads or hard plastic in places where you'll likely hit/slide on your hand.
These arnt even full track gloves and you can see a clear difference.

Work boots are much differnet that street motorcycle boots. Work boots generally only go slightly above the ankle where as street/track boots go up to the shin and help protect the ankel from moveing around. + same with the gloves they have skid pads or plastic in places that typicaly get high impacts and or sliding.
Once again, these arnt even full track boots and you can clearly see the difference in protection.
Its all about compromise...There are gear nazis who never ride w/o a full suit. But that is insanely impractical for some. Personally, I never ride w/o gauntlet gloves but regularly will commute to school or work in jeans, shoes/boots, leather jacket, gauntlet gloves. If I'm out tearing it up I'll throw on the full leathers. Its a personal choice, but from what I've seen and experienced people who have vs haven't crashed generally have a quite a bit difference in viewpoint of what gear is acceptable for them....take the hint.
