Not in a million years should you ever put a 200 rear on a RC51. The bikes turn in slow enough as it is, nevermind the wider, flatter profile of a 200 rear.
Go with the stock 190 and shim the shock to increase swingarm angle (check out rc51.com or rc51.org for info on that) or opt for a 180. The taller profile will make the bike turn in quicker and help make the bike feel a little less porky.
As far as tire brands go, everyone has their favorites. The important thing is to find yours and stick with it, especially after you get the suspension sorted out (i.e. set sag, compression, rebound). There is nothing more stupid than getting a new type of tire everytime you buy tires. Also I dont care what anyone says, but you don't "need" DOT race tires for the street. Run them if you like, but mostly you will be throwing your money down the drain.
Personally I like Michelin Pilot Powers, although currently I have stock Dunlop D208's because I got a deal on them at my local shop.
