That's because he got into some kind of wreck and broke his nose between Star Wars and The Empire Strikes back. I think they worked it into the story by making him get attacked by that ice monster at the beginning of ETB.

Ok, I'm really going to date myself now, but here's who I had a serious third degree crush on as a teenager. Sometimes I wonder if married my ex-husband b/c he was british and looked very similar to this guy:
