General A/F mixture Q and idle Q
Let's say your cruising along at 4k RPMS (bike has 11k Redline) on the highway, as your crusing along, not moving the throttle at all, you can feel the bike lose power slowly, then it'll 'catch up' and feel fine again. The loss of power is random, and it only does it for 2 seconds or so. Speed will drop maybe 5 MPH at most.
Or, say your cruising along at 5k, and you go to hammer the throttle, and the bike doesn't respond right away, even though it is carbed? Sort of like it stumbles... Most noticeable when RPM's are coming down from a fast sprint, you let go of the throttle to slow down, and then hammer again, it stumbles and then goes as fine.
Lastly, the idle of the bike seems low (between 900 and 1,100 RPMS) and sounds like it wants to quit, even fully warmed up.
Would these instances give you the impression of a mixture too rich? I know I can make the idle higher manually on the carb, but if it is due to rich mixture, I might as well nail the source. I suspect the PO had it rich for the high RPMS on a track since the bike was getting prepped for trackdays...
