You can surpass the weight limit, just not recommened. My little crf50 has a weight limit of 88lbs, I rock it out and I weigh 180lb. Granted it bottoms out making it unstable, got a spring on the way though.
Yes, there is a limit. For instance, in my owners manual on my Ninja 250, it states that the maximum weight on the bike is 340 lbs. My guess is that, on a 600, it's not going to be much more. Maybe 350 - 380.
If you look in the owner's manual, it should tell you maximum loads.
If it breaks you can sue the bike manufacturer, the tire manufacturers, the shock company, the seat company, the state, and probably the federal government for not making laws that allow 500lbs of weight on a sportbike.

385? Shit, I think I hit that once with a passenger on my F4i. The bike turns into a fukking slug though with that much weight. I can only imagine what my 600 would feel like if I weighed 135 instead of 235... If only. Maybe I should start smoking crack to keep that pesky bone weight off.
My 450 supermoto on the other hand can't take passengers at all.
