Does anyone know what the actual name of the yellow paint is on the 2000 Daytona 955i? I can't seem to find it anywhere.

Yeah, "Acidic Yellow" was the color on the old T595s... they changed it to the electric banana yellow color that you described after the T595 was replaced.

nope.. that's wrong. Old T 595's were gold, very similar to the new Speed Triple. Acidic yellow came out in 2002. It's on some RS's and Daytonas
