I will probably get slapped with the noob bat for this one but, what exactly is it? On the fly suspension adjustment?

That's a Penske Shock.
Triple adjustable.

Is that an adjustment where you would have to put the bike on a stand and change the suspension or is it like a push button?

Sportbike: too many to list
No it has high speed, low speed compression adjusting and rebound adjusting as well as spring preload and ride height adjustments.
Some are the turn of a knob some are more complicated

If you look at the second and third pics, you'll see the knobs right by where the hose enters the reservior (the thing strapped to the frame).
There are two knobs that are adjusted there which handle how the shock compresses at high and low speeds.
At the bottom of the shock is an adjuster that handles rebound, which controls how fast the shock extends back after compressing over a bump
The fourth adjustment is called spring preload. It controls how much the shock spring is pre-tensioned.
The shock is also adjustable for length, which changes ride height and affect weight distribution. Higher in the back, more load placed on the front.
Hope this confused the hell out of you.

actually the description was pretty clear, only confusing thing would be how to know where to set it up, like when you would want a higher or lower ride height, or when you would want more load on the front etc...

I get the reference, but it's the Clash.
Anyhow, the ride height should be done by someone who really knows what they are doing. I had the chassis Computrak'd and worked with an AMA crew chief. In other words, don't just start messing with ride height.
Also, it's not on every shock. My advice is to read everything you can about suspension adjustments before you tear into it. It can screw your bike up badly if done wrong.
Also, if you are a relatively new rider, chances are you will have no idea what to gauge to figure out an adjustment for it.

Complete GP suspension rebuild. All damping parts have been changed, as have all of the valving.
This will be in a story soon.

Looking good!!!
I gotta say, though.... for a shock that has to cost in the realm of about 850 bucks.... the mounting system is pretty ghetto...
A pair of worm hose clamps? Kinda looks cheap....
I mean- it's not something you should REALLY worry about too much- but come on... it's a pair of 70 cent hose clamps...

The shock is 1150, actually.
They want it to move around a bit, so that's what they do.
