Taller guys have more leg to stick out, especially if they tilt themselve a bit in the saddle. I've seen really tall guys drag a knee without tilting the bike very much at all.
With proper technique it's all pretty much the same. If you're goal is to carry as much corner speed as you can, then you want to maximize the speed allowable by lowering the center of gravity of both the bike and the rider, all while remaining in control and without upsetting the steering or the suspension while entering or exiting the corner. Theoretically, the more you could lean off the faster you could go, but if you have to jerk on the bars to pull yourself back into the saddle or can't effectively steer the bike while in mid corner, then you've set yourself up for some issues if you have to deal with anything except a constant radius corner where you're the only rider on the track.
